Ayam Goreng with Sambal Ijo

- Pot, pan and cooking utensils
- 2 pc whole cut chicken
- 2 sdm sugar
- 2 tsp salt
- 2 tsp pepper
- 3 tbsp cornflour
- Oil for frying
Make blended spices;
- 6 pc Garlic
- 2 pc Shallot
- 25 gr Galangal
- 15gr Ginger
- 4cm Tumeric
- 3 pc Lemongrass
- 2 tbsp Corriander seeds
- 80ml Water
Sambal Ijo (Green Chili Sambal)
- 7 pcs green chilli
- 5 pcs small hot chilli (optional)
- 100 gr garlic
- 100gr Shallot
- 5 tbsp Oil
- 1 tsp Salt
- 1 tsp Sugar
Step by Step
- Make paste of the spices, mix with the cut chicken and let it marinate for minimum 30 minutes.
- Heat up the oil for frying.
- Add sugar, salt, pepper and the cornstarch to the marinated chicken.
- Fry the chicken with medium heat to ensure its cooked without being burnt ( approximately 10-15 mins depending on how big is the chicken).
- Prepare your sambal . Firstly boil the chilli for 6 minutes. Add shallot and garlic in the last 2 minutes.
- Put it in chopper. Make sure not to chop it too fine.
- Heat up oil in frypan, add the sambal paste, cook it approximately 5mins until the oil come out.
- Your fried chicken and sambal is ready! Pro tip : enjoy it with hot rice and also cold cut cucumber.
