Ingredients
- 3 pcs Chicken thighs
- 1 tsp Onion powder
- 1 tsp Garlic powder
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp Sugar
- 1 tsp mushroom powder / chicken powder (optional)
- 1 egg - beaten
Dry coating mix
- 150 gr All purpose flour
- 150 gr corn flour
- 1 tbsp baking soda
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp salt
- 2 tsp pepper
- 1 tsp sugar
- Oil to fry
For sambal
- 5 red chilli
- 10 birdseye chilli ( optional depending how hot u want it to be)
- 2 shallot
- 3 cloves garlic
- 5 tbsp Oil
- 1/2 tsp Salt
- 1/2 tsp sugar
- 1/2 tsp mushroom powder
- Lime
Recipe
- Marinate the chicken thigh with onion powder, garlic powder, salt, pepper, sugar and chicken powder for minimum 15 mins (the longer the better).
- Preheat oil for frying the chicken.
- Prepare your dry coating mix - mix all the dry ingredients.
- After marinated, dump the chicken to the dry flour mixture, then egg, and back to the flour. Fry it straight away.
- Cook until it’s golden and crispy - approx 10 mins.
- Prepare your sambal /chilli paste while you are waiting for the chicken to cook. Pound chilis, shallots and garlic into a paste.
- Heat up the oil and pour it over the chilli paste.
- Add salt, sugar and mushroom powder.
- Squeeze a bit of lime/ lemon on top.
- Strain the fried chicken from any excess oil, smash it apart and spread the sambal on top.
- Enjoy while it’s hot with steamed rice.
