Balinese Pork with Sambal Matah

Preparation & Cooking Time 30-45 minutes
Ingredients:
- 500 gr Pork belly / pork shoulder
- 1 tsp Sugar
- Pepper
- 1/2 tsp Salt
- 1 tbsp Oyster sauce
- 2 tsp Cornstarch
- Oil to fry
For sambal matah:
- 100 gr Shallot
- 2 stalk Lemongrass
- 4 Kaffir lime leaves
- 1/2 tsp Shrimp paste - ready to use
- 1 tsp Lime / lemon
- 5 tbsp Oil
- 1/4 tsp Salt
- Pinch Sugar (optional)
- Chili ( optional )
Recipe
- Cut the pork into smaller pieces.
- Marinate the pork with salt, pepper, sugar and oyster sauce.
- Leave it for minimum 15 minutes.
- Prepare your Sambal matah with slicing (julienne) the shallot, kaffir limes, lemongrass and chilli.
- Heat the oil in a small pan, then pour it over the sliced shallot, lemongrass and kaffir lime. Add your shrimp paste ( unless it's ready to use, you need to ‘cook’ it beforehand), chili, salt and sugar, mix it well. Lastly add the lime.
- When the sambal is done then prepare to fry the pork.
- Just before cooking, add 2 tsp of cornstarch to the marinade. Then fry your pork until it is golden and crisp on the outside.
- It's best to enjoy your fried pork and sambal matah with hot rice!
