Balinese Spicy Pulled Chicken

  • Pan
  • Nutribullet
  • Thermomix (optional for shredding the meat)

    Make The Paste
  • 10 pcs Red chili 
  • 8 pcs Garlic 
  • 2 pcs Shallot 
  • 30gram shrimp paste 
  • 1/2 tsp Salt 
  • 50 ml water to blend the mixture 
  • 1 kg chicken breast
  • Oil to fry 
  • Kaffir lime leaves 
  • 1/2 tsp Salt
  • 1 tbsp Sugar

    Recipe
  1. Prepare your spices to paste. Blend chili, garlic, shallot, shrimp paste, salt, sugar and water. Do not blend it too fine.
  2. Preheat the oil for frying your chicken. 
  3. Cut your chicken breast using along the grain, so you have longer strips. It will be easier to shred later. 
  4. Fry the chicken around 5-7 mins until it is golden and well done. TIP : Alternatively, you can put the chicken in to the oven, or even boil instead of frying it!
  5. Drain the excess oil from your chicken and let it cool. 
  6. Start shredding your chicken - TIP you can apply pressure by smashing it beforehand to make it easier to shred. 
  7. Mix the shredded chicken with the chilli paste and let it marinate for 30 mins. 
  8. Preheat your pan, add oil and sauté the marinated chicken. Add kaffir lime leaves, salt and sugar. Adjust seasoning to your liking. 
  9. Enjoy your Balinese pulled chicken!
