Barramundi with Apple & Mango Salad

A light dish to say good bye to Summer!

Ingredients :

  • Oil for frying
  • Barramundi (or fish of your preference)
  • 1 Egg - beaten
  • 1 cup all purpose flour
  • 1 cup corn flour
  • 1 tsp baking powder
  • Onion powder, garlic powder, salt &  pepper
  • 1 green Mango
  • 1 whole Granny Smith apple
  • 1/2 pc Red onion
  • 1 whole shallot
  • Coriander
  • 2 tbsp Palm sugar
  • 3 tbsp Fish sauce
  • 2 tbsp Lime juice

Recipe 

  1. Preheat oil to fry the fish.
  2. Mix flour, cornflour, baking powder, onion powder, garlic powder, salt and pepper.
  3. Cover the fish with the flour mixture, then dip it in the beaten egg.
  4. Cover it back with the flour mixture.
  5. Fry the fish until golden ( approximately 10 mins).
  6. Prepare the Thai mango dressing, shred the green mango and green apple, put aside.
  7. Slice the shallot and red onion.
  8. For the sauce, mix fish sauce, with palm sugar and some lime juice. Adjust the taste to your liking.
  9. Mix the sauce with mango, apples, shallot, red onion and coriander.
  10. When the fish is ready, add the salad on top of the fish. 
  11. Enjoy your fish with refreshing salad!
