- 500 gr Noodle
- 1 tbsp dried shrimp
- 2 tbsp Olive oil or any oil for stirfry.
- 50 gr shitake mushrooms
- 30 gr dried lily flower
- 500gr pork belly
- 3 eggs
- 4 tbsp Tapioca flour & water
- 4 tbsp Oyster sauce
- 5 tbsp Soy sauce
- 1 tbsp Dark soy sauce
- 1/2 tsp Salt
- 1 tsp Pepper

Recipe
- Pre-soak the dried shrimp in hot water for minimum 30 mins.
- Pre-soak the dried shiitake mushrooms and dried lily flower.
- Start by making the sauce. Heat the wok and add the oil. Add the pre-soaked dried shrimp, toss for a minutes then add sliced shiitake mushrooms.
- Add garlic and stir.
- Add the seasonings - oyster sauce, soy sauce and dark soy sauce.
- Deglaze with water.
- Bring to boil and then simmer for 1 hour.
- Add pre-soaked lily flowers and cook for another 5 minutes.
- Mix tapioca starch and water to make a slurry.
- Add the slurry until the consistency is thickened.
- Crack the eggs and quickly mix with fork.
- Add egg to the pot. Mix well and cook for another 5 minutes.
- Add more salt, pepper or sugar to your liking. Sauce is done.
- Prepare the noodles - add to boiling water for 3-5 minutes or as per the packet’s instructions.
- To assemble, put the cooked noodle, some spring onions and pour the sauce over the top. You can add some chilli
