Mapo Tofu

Preparation & Cooking Time 30-45 minutes

Cooking Tools & Ingredients

  • Wok & Ladle 
  • 250g pork mince
  • 6x cloves of garlic - minced
  • 1x bowl of semi firm tofu. We buy ours from Costco.
  • 2x tablespoon oyster sauce
  • 2x tablespoon soy sauce
  • 1x tablespoon dark soy sauce
  • Sugar, salt & pepper (to your taste)
  • 2x tablespoon tapioca starch
  • 1x tablespoon sichuan paste
  • 1x teaspoon of chilli oil
  • 1x spring onion
  • 1x red chilli
  • 1x cup or 150mL of water
  • Cooking oil
  • Rice

Recipe 

  1. Prepare the ingredients and cooking tools.
  2. Mix the sauces - oyster sauce, dark soy sauce and soy sauce.
  3. Turn on the heat and place the wok on the stove. Wait 2 minutes.
  4. Add cooking oil to the wok.
  5. Add in minced garlic and sautéed.
  6. Add minced pork and stir until cooked to well done
  7. Add in your mixed sauces - oyster, soy and dark soy.
  8. Add in salt, pepper and sugar (to your taste).
  9. Add 150mL water.
  10. Add in cubed tofu.
  11. Mix tapioca starch with water and pour it into the wok in moderation whilst stirring. This helps to thicken the sauce so that it is not runny.
  12. Add spring onions.
  13. Add chilli, Sichuan chilli paste and chilli oil.
  14. Stir for 2 minutes before serving in a bowl.  
  15. Ready to serve with hot rice.
