Thai Glass Noodle Soup (Gaeng Jeud)

A nostalgic dish filled with plenty of vegetables and goodness. This Thai soup is simple to make and helps to keep you warm during the colder months. One of my husband's favourites!

Preparation & Cooking Time 
30 minutes

Cooking Tools & Ingredients

  • Ironcast Dutch Pot or any pot (Option 1, Option 2, Msg me for others)
  • 250 pork mince 
  • 5 garlic cloves 
  • 20 gr minced ginger 
  • 1 egg
  • 2 tsp cornstarch 
  • Wintermelon
  • Carrot 
  • Cabbage 
  • Egg tofu 
  • Salt, Pepper & Sugar 

You can substitute or add any other vegetables of your preference!

Recipe 

1. Mix pork mince with garlic, ginger, egg, cornstarch, salt,pepper&sugar. Keep on mixing until the mixture becomes sticky. 

2. Wait until water boils.

3. Pork meatballs - Use your hand or spoon to make them into a round ball and carefully drop them into them pot.

4. Cook for 7-10 mins. 

5. Add the wintermelon, cook for 5 minutes. 

6. Add carrot, cabbage and glass noodle. 

7. Add egg tofu. 

8. Add seasoning, adjust to your liking.
